Punjab Grill by Jiggs Kalra – Indian Fine Dining At Marina Bay Sands

Punjab Grill by Jiggs Kalra is considered one of the top Indian restaurants in Singapore, located at Marina Bay Sands serving food from gourmet metropolises of Lahore, Peshwar, Rawalpindi, Kabul, Amritsar, Multan and Patiala. (Reserve Online Now – Punjab Grill)

This Singapore outlet at MBS is famed Indian Chef Jiggs Kalra’s first Punjab Grill outside India, an Indian fine dining restaurant offering cuisines from the royal kitchens of Punjab with a twist of modernity. (Our dessert cake was served on a toy wooden chair.)

The interior is to present a “chic and modern take on the glamour of Indian royalty”, add a view of the kitchen at work with hand-beaten copper Tandoors. I thought the restaurant could be brighter for a more upbeat ambience, which was further affected by a trapped-lingering smell of grills and curries.

I am not familiar with Indian classics, and wondered about the music that seemed to be on replay mode.

Set meals available: Weekday Power Lunch ($45++) Executive Set Lunch (both $70++), Weekend Kebabs and Biryani Feast ($48++). Prices are the same for Non Vegetarian or Vegetarian option.

I went for the 5-course Degustation Menu ($98) which was already quite filling – from a Golgappa Platter; Murgh Badami Shorba (spiced consommé of almonds and free-range chicken); plate of Salmon Tikka, Tandoori Jheenga (tiger prawns) and Champ Taajdar (New Zealand Lamb Chops); curry dishes of Murgh Makhani (tandoor-grilled chicken tikka), Patiala Shahi Machchi (fish in plum and tomato gravy) and Daal Punjal Grill served with assorted breads; then ending with a dessert.

There were some hits and misses. Some combinations tasted clashing.

The highlight were the flavourful grills (oh the prawns), prepared by the four ancient grilling techniques of Tandoor, Sighri, Tawa, and Kadhai.

A Royal 10 course Indian Degustation Menu is also available ($190++) though advance reservation is required.

The exceptional dish is Meet (an ‘e’ not ‘a’) Punjab Grill ($45, if part of ala carte). The lamb is culled from the shoulder of lamb, thus had the firmness yet slippery with some fats attached. The curry gravy was superbly rich and robust, cooked in an old-fashioned way over low heat.

Noted that there were some were dining outdoors on the way out – that area didn’t feel as classy as the inside.

Service overall was professional and polite, being able to explain the dishes with clarity, though they could look short-handed at times. A worthy try if you are keen to experience higher end Indian dining in Singapore.
