When I first wrote about Mother Dough Bakery back in 2018, I described as a “bakery quietly opened… with those in the know snapping up their bakes”.
3 years later, their breads and cakes continue to be sold out (even much earlier), and the shop has moved to a short distance away from North Bridge Road to Jalan Kledek. So to its fan, worry not as it still remains in Kampong Glam.
There will be a dine-in area on the 2nd level, though it is still in the works. Therefore, it is just a takeaway concept for now.
The Muslim-owned bakery started by appearing in various pop-up events previously, and gained popularity through word-of-mouth.
The term “Mother Dough” or pre-ferment, refers to the fermentation starter or sourdough culture used in bread making.
The person helming the kitchen actually had its humble beginnings and training from New York City.
Owner and baker Naadhira started her bread education at The International Culinary Institute in NYC, and spent four years working in various bakeries in the Big Apple.
That includes Runner & Stone in Brooklyn, where she honed her skills in making baguettes and croissants.
The bakery serves up a variety of Croissant, Brioche, Baguettes, and Quiches, alongside a selection of Lemon Cake, Banana Walnut Cake, Dark Chocolate Cake, and Fruit & Nut Cake.
Choices may differ day to day.
In terms of sourdough breads, there are Milk Bread ($9), Brioche Loaf ($7), Whole Wheat ($8), Regular Baguette ($3) and Brioche Loaf ($7).
Also look out for special items such as Macadamia Valrhona Chocolate Caramel Tart, Butterscotch Pudding Pie, Peach Stilton Brioche Tart, Grapefruit Cream Danish, Fish (haddock and smoked salmon) Pie, Cornbread and Focaccia Toasties.
Because everything else was sold out or pre-ordered, I was left with a Lemon Cake ($4.00) which turned out to be simple yet delightful – the cake was gently soft and not overly sweet.
The lemony flavours were subtle and did not overpower the whole cake.
Beverage choices include Espresso ($3.50), Long Black ($4.50), Latte ($5), Cappuccino ($5), Mocha ($6) and Chai ($5.50).
The Iced Latte ($6) I had though not the best around, was still balanced and not too acidic.
During a repeat visit, I managed to get my hands on the best-selling Almond Croissant – crispy and fragrant, well-worth for its popularly.
